It is getting to be that time where everyone is starting to plan their Thanksgiving get together's. Who is going to whose house, who is bringing what, and what kind of meal will be served. At our house it is strictly a traditional Thanksgiving meal. This is a very easy sweet potato recipe. I like to cook this because it is very tasty and looks as good as it tastes.
Some quick sweet potato facts for you. Do not refrigerate them. It turns the core part of the sweet potato starchy and hard. Sweet potatoes are smooth and sweet. They are high in beta carotene and vitamin A. More twins are born nine months after Thanksgiving and Christmas than any time of year. It is thought that sweet potatoes have something to do with this phenomena. [ Yams are very low in vitamin A, they are not sweet. They are starchy and generally their skin is rough.]
6 medium sized sweet potatoes - wash well
1 cup orange juice
2 teaspoons grated orange rind
1 tablespoon cornstarch
3 tablespoons melted butter
1/3 cup brown sugar, firmly packed
1/3 cup granulated sugar
Cook potatoes until tender. Combine all of the remaining ingredients in a saucepan and cook, stirring until thickened. Arrange sweet potatoes, cut in 1/2 inch lengthwise slices, in a baking dish [I use a 9 by 13]. Pour the sauce over them. Cover and bake in moderate oven at 350 degrees for twenty minutes. Uncover and bake 15 minutes longer. Serve. If there are any leftovers I put them in my pancake mix the next morning. Yum!
