Momma's Pancakes
This is a really easy recipe. You can make the whole thing in your mixer. This recipe will feed four people. For a little variation you can substitute orange juice - 1/2 cup for the sugar. It gives the pancakes a little something. You can also add fruit once the batter is made. Serve with maple syrup, juice, and bacon.
2 large eggs
1 1/4 cup milk
2 teaspoons vanilla
3 tablespoons butter - softened
1 1/2 cups all purpose flour
3/4 teaspoon salt
2 tablespoons baking powder
2 tablespoons granulated sugar
Combine eggs, vanilla and milk in your mixer. Beat on high till foamy, around 2 or 3 minutes. Stir the butter in. Combine and sift all of the dry ingredients. Quickly add to egg and milk mixture, stirring gently. Let the batter sit for a few minutes. [If you have guests you can make batter the night before and let sit in refrigerator covered.] At this time I heat up the griddle. You will know when the griddle is ready when a few drops of water dance across it. Usually about 300 degrees. Each griddle is different. I always do a test pancake. I measure about one soup ladle per pancake of batter. It all depends on how big you like them. I like using a soup ladle because it pours well. Also, with small children it keeps them farther away from the griddle. Have fun and enjoy.
