Seven-Up Pound Cake

I have a thing for recipes that include soda pop. I do not know why, I just do. Maybe it is the kid in me or maybe I am just wondering how someone came up with the idea. They were just standing in the kitchen and thought "hey I do not feel like finishing this so I will add it to the recipe?" Anyway, I ran across this fundraiser cook book from a local elementary school in a thrift store. I found this recipe in it and tried it last night. It is great and very easy. This might be a good dessert for the Super Bowl party!

Seven-Up Pound Cake

2 sticks butter

1/2 cup Crisco

3 cups of sugar

5 eggs

3 cups flour

1 cup 7-up

1 teaspoon vanilla

Preheat oven to 325 degrees. All ingredients should be at room temperature.

Cream the butter and shortening[Crisco] with the sugar.

Add eggs, one at a time, beating well after each.

Add flour alternately with the 7-up and vanilla.

Bake in a greased and floured Bundt pan or tube pan for 1 to 1 1/2 hours.

Serve with fruit. Delicious!

  1. looks delicious!! Crisco...has to have been passed down for a few generations! my family came from the south and so many receipes for pies,cakes and cookie have crisco in them1 can't beat it for texture and flavor!! thanks for sharing!! have a happy and fun weekend1

  5. Oh this looks so yummy! Could you tell me what equivalant 2 sticks of butter would be? i/4 c - 1/2 c?

    Would love to try this recipe but we don't get our butter or margarine in "sticks".

  6. Rena 2 sticks of butter is 1 cup or 1/2 pound. Hope this helps.

  7. Sounds good! I often wonder how people come up with some of this also. Ham with coke? Pound cake with 7-up? And why mostly butter but some Crisco? Maybe they just didn't have enough butter? I'll have to try it out though. I do love pound cake.

  11. Sound delicious. I wonder why the name "pound cake"... is it because the first such cake weighed a pound or because every piece puts another pound on my hips?
    I'll have to try this when I'm serving lots of people so I won't be tempted to eat it all.

  12. That looks yummy! Here is another 7Up cake that is more of a pineapple cake.

    7 up Cake

    1 box pineapple cake mix
    1 box lemon pudding
    4 eggs
    3/4 cup oil
    1 10 oz. 7up
    To cake mix and pudding add eggs, & oil. Then add 7up. Scrape bowl and mix well. Bake in 2 9" pans for about 25 minutes at 350.

    cooked Frosting

    ½ cup chopped pecans
    2 beaten eggs
    1 3/4 cups sugar
    1 lg. can pineapple
    1 cup coconut
    2 tsp. Vanilla
    1 stk margarine
    3 heaping tsp. Flour

    Cook eggs, sugar, pineapple, vanilla, margarine and flour in a heavy sauce pan until thick. (About 15-20 minutes) Do not burn and don’t leave it. Add chopped pecans and coconut. Cool and spread onto cake.

    I was wondering if it would matter if i used diet 7-up or if maybe the extra sugar is needed in the pop? We buy pop by the flat, always diet so that we have room for cake...
