Seven-Up Pound Cake

I have a thing for recipes that include soda pop. I do not know why, I just do. Maybe it is the kid in me or maybe I am just wondering how someone came up with the idea. They were just standing in the kitchen and thought "hey I do not feel like finishing this so I will add it to the recipe?" Anyway, I ran across this fundraiser cook book from a local elementary school in a thrift store. I found this recipe in it and tried it last night. It is great and very easy. This might be a good dessert for the Super Bowl party!

Seven-Up Pound Cake

2 sticks butter

1/2 cup Crisco

3 cups of sugar

5 eggs

3 cups flour

1 cup 7-up

1 teaspoon vanilla

Preheat oven to 325 degrees. All ingredients should be at room temperature.

Cream the butter and shortening[Crisco] with the sugar.

Add eggs, one at a time, beating well after each.

Add flour alternately with the 7-up and vanilla.

Bake in a greased and floured Bundt pan or tube pan for 1 to 1 1/2 hours.

Serve with fruit. Delicious!
