Anyone who has read my blog knows I am Southern and like recipes that use soda. Yes, we call it soda down here. I grew up in Georgia so my love of Coca-Cola was naturally acquired. So I am giving you my delicious cake recipe. Treasure it....
2 cups sugar
2 cups flour
1 tsp. baking soda
1/2 cup Crisco
1/2 cup butter
1 cup Coca-Cola
Sift together sugar, flour, and baking soda. Mix remaining ingredients in a sauce pan and bring to a boil. Mix dry ingredients with the liquids. Then add:
2 eggs
1/2 cup buttermilk
1/2 tsp. vanilla extract
1/2 cup small marshmellows
Pour into a greased pan, I use a bundt pan, and bake at 350 degrees for 45 minutes.
Icing: Mix and bring to a boil:
3 Tablespoons cocoa
6 Tablespoons Coca-Cola
1 cup nuts/I use pecans
1/2 cup butter
1 tsp. vanilla extract
1 box confectioner's sugar
Mix and spread over hot cake.

mandarin orange cake
this is a box cake...we generally do scratch cakes
she says this one is really really worth doing
1 yellow cake mix
1 large can mandarin oranges
4 eggs
1/4 cup oil
1 large cool whip
1 large box instant vanilla pudding
1 15 oz crushed pineapple
cake - mix cake, eggs,oil,and drain mandarin oranges using part of the juice instead of the water listed on cake mix box (will not be same amount as listed it makes cake too moist), then add some of the mandarin oranges - ( leave some to top cake too)
make according to directions
frosting
cool whip, pudding, and drained crushed pineapple
donna says it is absolutely awesome
i haven't tried it but it sounds good
enjoy
refrigerate
Thank you, Elizabeth, for sharing your Coca-Cola Cake recipe! What size or shape pan do you use for baking? I'm assuming that it may be a Bundt pan as that's what's in the picture, but I'm not sure!
That Mandarin Orange Cake recipe? I acquired it while I lived in Winston-Salem and it is incredibly good!

Sounds very interesting - if my DH wasn't allergic to caffeine, I'd probably try it. I may have to see about making it with caffeine free coke.

Don't know where this came from, but my family always said "soda pop"--like it was one word. I'm from way south--Mississippi. Coke can be used over ham, too. Just pour the coke over the ham and bake. It makes a nice glaze. I have eaten the madarin orange cake and, box cake or not, it's good.
