Corn Chowder

Baby its cold outside and a good bowl of soup is just the answer. This corn chowder can be made ahead. It is also a good recipe to freeze. And... it is a recipe you can change up with just adding a few ingredients. For instance a can of crab meat - backfin - is delicious, or some grilled chicken, my personal favorite is grilled salmon. Serve with a simple salad and a few rolls and you have a wonderful meal.

5 slices of bacon, chopped up
1 large onion, diced
4 potatoes, diced
1 cup water
2 10 ounce packages of frozen corn
3 cups milk
2 teaspoons sugar
1/4 cup butter
2 1/2 teaspoons salt
1/4 teaspoon pepper
optional - mushrooms, green or red peppers, a jalepena pepper cut up, celery

Cook bacon and remove from pan.
Saute onion in bacon grease.
Drain grease.
Add potatoes and water. Cook 10 minutes.
Add remaining ingredients. Cook over low heat for ten minutes.
Serve in bowls with bacon crumbled on top.
Serves 8.

Elizabeth, it is 11pm at night here, and I am reading this recipe and getting hungry! Wow, it sounds wonderful...and just a great meal for winter weather!
